Paté de Pâques (Easter Pastry)
Filling :
200g of sausagemeat
1 onion
A few sprigs of parsley
Several slices of bread, made into crumbs
Large spoonful of cream
4 hard-boiled eggs
1 egg yolk for glazing
Pastry :
300g plain flour150g butter
1 egg
Hot water
Salt
1 spoonful of oil
Preparation and cooking time : 30 minutes
Make the pastry by mixing together the above ingredients, leave it to one side while you prepare the filling.
Chop the onion, theparsley and the bread in a food processor.
In a bowl, mix this together with the sausagemeat. Add the cream. Mix well.
Remove the shells rom the four eggs, and cut each of them in half.
Roll out the pastry onto a floured surface, in the shape of a large rectangle.
Arrange the filling along the middle of the rectangle of pastry in a strip about five centimetres wide, then place the egg halves on top of i tat regular intervals.
Fold the pastry over the filling and the eggs, seal the edges with milk or water.
Make a chimney to let out steam.
Glaze with egg yolk and bake for thirty minutes in a hot oven ( 210°C)
May be eaten hot or cold.
